Fried Rice with Vegetables

Fried rice is a quick and delicious way to use up whatever vegetables you have in your fridge. If you like your fried rice on the salty side, add a little soy sauce to the recipe.

  • 4 cups cooked rice, chilled (rice is best if made a day or more before)
  • 2 eggs
  • 1 teaspoon dry sherry or rice wine
  • 4 tablespoons peanut or canola oil
  • 1/2 cup thinly sliced green onions
  • 1 cup frozen peas
  • 1 cup finely chopped carrots
  • 1/2 cup finely chopped red bell pepper
  • 1 cup roughly chopped fresh mung bean sprouts (optional)
  • 2 tablespoons Asian plum sauce (optional)
  • 1 teaspoon Asian hot chile sauce (optional)

Serves 4

  1. Use a fork to break up any clumps that have formed in the rice.
  2. In a small bowl combine the eggs with the sherry and add 1/2 teaspoon salt and a few grinds of black pepper.  Whisk with a fork to break up the yolks.
  3. In a wok or large non-stick skillet, heat the oil over medium-high heat. When the oil is hot, add the green onions and stir for about 15 seconds. Pour in the egg mixture and stir and cook just until the eggs are starting to set and get puffy.
  4. Add the rice to the pan and stir to combine with the egg, using the edge of your spatula to break apart the cooked egg.
  5. Add the peas, carrots, red pepper and bean sprouts (if using). Continue stirring and cooking until the ingredients are well mixed and heated through.  Add the plum sauce and hot chile sauce (if using.) Taste and add more salt if desired. Serve hot.
