Spinach Salad with Strawberries

This spinach salad is made delicious with the addition of sweet, seasonal strawberries. If strawberries aren't at their peak, use dried fruit, such as cranberries, instead.

  • 1/2 cup pecans
  • 6 ounces baby spinach, washed and blotted or spun dry
  • 1 1/2 cups sliced fresh strawberries
  • For the dressing:
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • Pinch of sugar
  • 2 tablespoons extra virgin olive oil

Serves 4 to 6

  1. Toast the pecans by placing them in a dry skillet and cooking over medium heat for about 2 to 3 minutes, tossing occasionally. They should become slightly darker and very fragrant.  Allow the pecans to cool slightly before tossing with the spinach.
  2. Place the spinach, strawberries and pecans in a large bowl and toss gently.
  3. Make the dressing by combining the vinegar, mustard and sugar in a small bowl.  While whisking, add the olive oil in a slow, steady stream.  Whisk well to incorporate.  Taste and add a little salt and pepper if desired.
  4. Drizzle the dressing over the spinach mixture and toss to coat. Serve immediately.
